Open the ticket's row menu (or the ticket page) and choose "Suspend this email". Their future mail is held instead of becoming tickets, and you can review it in the Suspended Emails view; "Stop suspending this email" undoes it. The Inbound Mail view is the audit trail of everything that arrived and what became of it.
